IP rating or ingress protection gauge the resistance of water against dust and water regression. The first number right after the rating donates protection against dust regression, the second related to the protection against water. 

An IP68 rated and IP67 rated smartwatch have same resistance against dust, but the former has better protection against water.

The ATM Rating is another measure of protection against water for electronic devices, especially smartwatches. It indicates how much static atomic pressure a device can withstand while in water. 

5 ATM means that the smartwatch can withstand a pressure of 5 bar or a water column of 50 meters. But that doesn't necessarily mean that the watch can survive 50m water depth in practice as the hand movement while swimming raises the pressure on the watch.

So a 5 ATM smartwatch or device has more protection against water ingress as that of a IP68 watch

Most smartwatches these days are ATM5. Apple's wearables from Series 3 to Series 6, Garmin Venu Series, Fitbit Versa 3 and Sense and so on. The standard has become a baseline for the smartwatch's water resistance, and you would find more watches in the future with ATM 5 rating. 

These watches usually track both pool and open water swimming. Also, these watches can pretty much handle surfing. 

IP68 rated smartwatches on the other hand can be taken to shower and pool bath, but you can't submerge them underwater for more than 10 minutes.
